Guiborat Fils

Richard and Karine Fouquet farm 8 hectares, mainly in the Côte des Blancs villages of Cramant, Chouilly and Oiry, plus a parcel of Pinot Meunier in Mardeuil used for the cuvée Prohibition. Only part of the production is bottled at the estate; the rest is sold to Champagne négociants, notably Laurent-Perrier, a long-standing client. Though not certified organic, the vineyard is run that way, without pesticides or insecticides. In the cellar, barrel aging is limited and malolactic fermentation isn’t always pursued. The wines are valued for their purity, length without severity and low, well-judged dosage.
