David Léclapart grew up surrounded by the rhythms of vine and wine. After a standard education outside viticulture, he trained at the agrobiology school in Beaujeu and returned to the estate with a desire to learn, a passion for working in harmony with nature and a strong conviction to respect living things “from vine to glass.”
Biodynamics is what gives him the greatest sense of purpose in this pursuit, even if risks and difficulties sometimes bring doubt. This philosophy allows him to follow four guiding principles: purity, energy, pleasure and ecology.
He now farms 3 hectares in Trépail, a Premier Cru village. Ninety percent of his vineyard is Chardonnay, vinified as Champagne and in some years as Coteaux Champenois; the rest is Pinot Noir, made either as red Coteaux Champenois or as blanc de noirs Champagne. The cuvée L’Aphrodisiaque is composed of 80% Chardonnay and 20% Pinot Noir, reflecting his full terroir.
