At Domaine Jacques Lassaigne, respect for the vine, the soil and the fruit guides every step of the work. In Montgueux, in the Aube, Chardonnay grows on a chalk hill often referred to as the “Montrachet of Champagne,” where it shows particular finesse, elegance and precision. These qualities also define the wines of Emmanuel Lassaigne, who now leads the domaine and has spent years refining his approach toward ever purer, more natural Champagnes.
His aim is to produce Blanc de Blancs that reflect the taste of the grape and the soil as closely as possible. This is achieved through partial barrel vinification, low pressure during the second fermentation, disgorgement à la volée without freezing and without added sulfites or dosage. Compared with Chardonnays from the Côte des Blancs, these wines are less sharp and linear, showing instead a more exotic, generous and delicate profile.
