Stéphane Regnault

Stéphane Regnault works in the Grand Cru village of Le Mesnil-sur-Oger in the heart of the Côte des Blancs. His view is that the grower’s role is to help the vine express its terroir. Vinification is kept simple so expressive fruit can speak for itself. He focuses on single-parcel Champagnes, since each site has its own identity. Fermentations during harvest are spontaneous, reflecting the natural yeasts unique to each parcel. After fermentation comes aging, with long months on lees to build structure and complexity. The use of SO₂ is rare.
