Something of a maverick, Michel Gahier has run his 8-ha estate in Montigny-les-Arsures organically for years, without certification, and has added no or minimal sulfites to his wines for decades, rarely being cited in lists of natural wine producers. He takes care to preserve some very old vines, and is experimenting with rare/forgotten grape varieties. In the cellar he works very traditionally with long ageing. Stars from his relatively small range include various Trousseau cuvées, Melon à Queue Rouge (Chardonnay) and Vin Jaune.
