Renaud Bruyère et Adeline Houillon

Couple Adeline (sister of Manu Houillon of Maison Overnoy, a big influence) and Renaud (who worked for Stéphane Tissot for several years) have quietly made a name for themselves as one of the most reliable natural wine producers, shunning sulfites completely. Having reduced their vineyards (in Pupillin and Arbois) to just 4ha, they do almost everything themselves. They enlarged their cellar in 2023 to give them flexibility for longer barrel and bottle-aging pre-release, and for making a small amount of Vin Jaune when they can. There are usually five white and three red cuvées. A treat if you can find them.
