Since 2000, Pasquale Polifroni has been committed to producing organic wines from vineyards located at the northeastern foot of Aspromonte. The soils here are rich in colorful clays and Pliocene sediments. His wines are made using spontaneous fermentation, aged in terracotta amphorae, and bottled without clarification or filtration.
